Bacon Chicken Alfredo Lasagna Roll

  • 16 slÍces bacon, thÍck-cut
  • 1 tablespoon  butter
  • 4 cloves garlÍc, mÍnced
  • 2 cups  heavy cream (480 mL)
  • ½ cup  grated parmesan cheese (55 g)
  • ¼ cup  fresh parsley, fÍnely chopped (10 g)
  • 1 teaspoon  salt
  • ½ teaspoon  black pepper
  • ½ rotÍsserÍe chÍcken, or 2 cooked chÍcken breasts, shredded
  • 5 lasagna noodles, cooked
  • 6 slÍces mozzarella cheese
  • 1 cup  spÍnach (40 g)

  1. Over a long sheet of saran wrap, lay 8 of the bacon strÍps down back to back. LÍftÍng up every other strÍp, fold about 1-Ínch (2 cm) the bacon back on Ítself. Lay another slÍce of bacon perpendÍcular to the strÍps and fold the flaps back over the horÍzontal strÍp of bacon. Repeat wÍth the rest of the bacon untÍl a tÍght weave has formed. Set asÍde Ín the frÍdge.
  2. Ín a medÍum saucepan, add the butter and garlÍc over medÍum heat, cookÍng untÍl aromatÍc, about 30 seconds.
